Dr. Xu is an Assistant Professor at the VSU Agricultural Research Station with a Ph.D. (2005) from the University of Nebraska, Lincoln in Food Science and Technology, an M.S. (1996) from Southwest Agriculture University, Chongqing, China in Food Sci. and Tech., and a B.Eng. (1993) from Southwest Agriculture University, Chongqing, China  in Food Engineering. Dr. Xu's research, teaching and extension/outreach interests are in applications of nanotechnology in food processing and food packaging to improve food quality and safety; novel food processing and packaging for food nutrition and shell-life extension of fresh produce and processed products; physical and engineering properties of food and biological materials; and value-added utilization of food industry waste and biomass. Dr. Xu is a member of the Institute of Food Technologists and the American Association of Cereal Chemists International.
